Kirk Peterson, Owner / Operator

Kirk Peterson is an experienced wine and spirits professional, wine educator, and award-winning writer enjoys a life and career dedicated to food, wine, and hospitality. After graduating from film school at UNLV he worked in the entertainment industry to then return to make his true passion - wine and spirits - a career.

 Sixteen years of experience in the Las Vegas market as sommelier, beverage director, distributor, and importer/supplier have provided Kirk deep insight into the nuances of the Las Vegas market in addition to a comprehensive network of local connections.

Lauren Koenig, CEO

Lauren joined Copa Fina in 2016 and has grown alongside the company ever since. With a background in hospitality and a certified sommelier credential, she brings a deep understanding of both the product and the people behind it. Her passion for wine is rooted in relationships, spending time in vineyards, learning directly from producers, and building long term partnerships across markets.

As CEO, Lauren focuses on thoughtful growth, strong execution, and staying true to the values that have always defined Copa Fina. She leads with curiosity, discipline, and a belief that great wine businesses are built on trust and consistency, not trends.

Outside of work, you’ll usually find her outdoors in beautiful Southern California, traveling wine regions when she can, or spending time with her dog, Woody.

Shelbi Herring, Founder

Shelbi Herring founded Copa Fina in 2009, bringing together her experience as a strategy consultant and a passion for wine. As a business consultant, Shelbi specialized in growth strategy, logistics, and finance, primarily in the retail category, working with companies such as Nordstrom, Gap, the Walt Disney Company, and Cardinal Health.

While Shelbi began learning about wine as a hobby, she began to seriously consider a break into the wine industry after traveling through Argentina in 2008. She fell in love with the country, the culture, and of course, the wines.
